Real Milk Cheese Queso Recipe

A glorious queso to be enjoyed by all.

Queso with tortilla chips is one of my favorite snacks, hands down. It elicits the feeling of relaxing in a small cantina with Mariachis in the background. That's how much I love it! I made it a couple of times in the past week and have honed in on a great recipe that I think you will really enjoy.

1 1/2 tablespoons of olive oil ( I find this to be the best oil to use for health and consistency sake)
1/2 cup of cream
1/3 cup of bell pepper and/or Jalapeno pepper**
1 1/2 to 2 cups of Real Milk Cheddar or Colby Cheese
1/4 Cup of Organic Salsa

Instructions: Place a saucepan on low to medium heat. Add olive oil and heat for 2 minutes. Add cream and stir into oil to create a base mixture. While this is heating stir in the Real Milk Cheese. Add peppers and salsa and continue stirring. Heat until the mixture reaches desired temperature and consistency. Be careful not to overheat because this will make the queso a bit runnier, trust me I know from experience. If you are like me and mess up the consistency from time to time you can remedy that by stirring in a couple of pinches of arrowroot.

Drizzle over your favorite tortilla chips and enjoy!

** This is a good place to start but you can really get creative with the recipe. For example, adding ground beef or breakfast sausage is a brilliant idea. Just cook the beef before hand in a skillet, drain, then pat dry with a napkin. Add to the heating cheese sauce and enjoy!
